In need of a healthy, delicious, and filling lunch recipe? You gotta try out this Roasted Sweet Potato White Bean Salad!
It’s super easy to make.
First, the sauce…just toss together oil, water, salt, lime juice, fresh herbs, garlic and white beans. Puree until fairly smooth and you have the tastiest sauce in town! You can pour this stuff on anything to make it taste better 🙂
Next, the salad. Roast up some diced sweet potatoes tossed in your favorite seasoning. I used smoked paprika (yummy), but chili powder, cayenne pepper, or cumin are all excellent spice options. Add some salt, pepper and olive oil to the mix and roast those potatoes until pretty soft. Also, make sure to remove the potato skins with a vegetable peeler before you cook them.
To complete the salad, just toss in 1 cup of white beans (or any other canned bean you have in the cupboard).
Toss them together and drizzle on your delicious green sauce and there you go!

- 1/4 cup extra virgin olive oil
- 1/4 cup water
- 1 lime, juiced
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 garlic cloves, minced
- 1 cup canned white beans, strained and rinsed
- 1 pinch salt
- 2 large sweet potatoes, skin removed, small dice
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika or chili powder
- 1 cup canned white beans, strained and rinsed
- Preheat the oven to 400-degrees Fahrenheit.
- In a medium mixing bowl, combine the diced sweet potatoes with oil, salt, pepper, and paprika. Toss the mixture onto a large baking sheet. Bake for 30-minutes or until the potatoes are soft. Set aside.
- In a food processor, combine all of the sauce ingredients and puree for about 60-seconds. Pour the sauce into a small container and set aside.
- To complete the salad, mix together the roasted sweet potatoes, white beans, and drizzle of green sauce. Serve warm.
